Cornbread


Mix:
1 cup cornmeal
2 1/2 cups Bisquick
1/2 cup sugar
1 tbsp + 1 tsp baking powder

Cornbread:
1 jar cornbread mix
3 eggs slightly beaten
1 1/4 cup milk
3/4 cup butter, softened

Preheat the oven to 350. In a large bowl, combine the cornbread mix with the eggs, milk, and butter. Stir until the mixture is just blended. Do not overmix. Divide batter into 2 equal portions, pouring in to greased 8-inch round baking pans. Bake for 25-30 min or until golden brown. Serve warm or cool completely on a wire rack.

This recipe is easily halved and use 2 small eggs or one large egg for the bread, otherwise use egg substitute and measure half
