Rice Pilaf


* 4 green onions
* 4 cloves of garlic
* 8 Tbsp. of uncooked rice
* 6 oz. fresh mushrooms
* 2 tsp. dried parsley
* 1 tsp. olive oil
* 1 onion, small
* 1.5 cups vegetable broth

Wipe mushrooms with a damp paper towel and slice. Mince garlic and finely chop onion. Heat oil in a nonstick saucepan on medium heat, and saute onion and garlic until soft, about 5 minutes. Be careful not to burn. Adjust heat to medium-high, add broth and parsley; bring to a boil. Add rice, return to a boil, then reduce heat to medium. Add mushrooms, stir and cover. Simmer 15-20 minutes or until rice is tender and water is absorbed. Remove from heat and let stand, covered for another 5 minutes and serve. Makes 2 servings.

I orginally got this recipe when I was doing ediets... it was one of the few recipes I actually looked forward to. Each serving is just over 100 calories and its pretty healthy for you
